This famous Chinese Tea is from the south of the province of Anhui. Freshly plucked leaf tips are made up into a rosette, by hand, then pressed flat and dried. Only the bud and the finest leaves are used in this special process. This is a very light tea and needs to be treated gently, brew with hot water at a temperature of 75 to 80 degrees centigrade and leave to infuse for 1 to 3 minutes. Re-infuse as often as you can before the flavor disappears. For best results a glass tea pot or sturdy Brandy glass show this unfolding to the best effect.
